Ubuntu is I guess the better of the binary distros for desktop use.. Not sure you will have much fun at all trying to do video stuff on it though. Gnome or KDE is most likely your Desktop Manager and they both have their own tools to do such things.. I can help you out more if need be and point you in the right direction..
I run Gentoo on my Laptop with no GUI for work reasons.. and am not a fan of any other distro to be honest.
Tell your husband I said to fork up a few bucks and run Vista with Ubuntu ontop in a VPC so you can do things easier

WOW my dad has his own comp business!!!!!! he builds/sells/fixes computers and makes them for all the local places AKA the mall and he wires buildings and makes them have complete systems for sound and stuff....

and now he just started a wireless business to run alongside it!!!!!!
