sounds good although im not familiar with those plants are they low bush types?

I had to search first in German Wikipedia to find the right articles in English. The first plant I couldnīt find at all.

Heather and ice plants are a good idea I think, but won't the other two become a bit too big for an enclosure that size?

There are very small kinds of moutain pines and cork screw hazel growing really slow, (and after all Gijs can make them bonsai )
Another alternative or exra plant may be Common Box.
