Puncture the top of the skull just above and behind the eyes (about between the ears) and then squeeze it a bit until you see light yellow stuff come out.

It's braining not de-braining, lol. You cut into the mouse's brain to allow the juices to flow out, which are supposed to attract a difficult feeder.
