I would want to put the sensors as close to where the snake would be as to get a more accurate reading but obviously if it's in the way for the snake to mess I will place it higher or right in the corner.
I have the thermostat sensor in, or on the surface of the substrate, and the thermometer probe close to the the thermostat sensor. I've settled on keeping the probes together on the warm side to give me a reading of the actual substrate temp. On the cold side I just have the thermometer probe on a sucker on the side of the tank just above the substrate.
Don't worry about the snakes interfering with the probes, then can't move them far and aren't going to eat them. You will find the wires used as climbing ropes, but just make sure they are secure and there's no gap where they leave the viv.
